Who is Paul Convey?
Paul Convey is an Irish-born engineer and builder in New York who co-founded Taverns-To-Go, a company that delivers and installs ready-made backyard bars. Trained in mechanical engineering, he worked as a project manager at Clune Construction Company and Celtic Sheetmetal and co-founded GarCon Systems before the bar business. He and Enda Crowley launched Taverns-To-Go in April 2020, when pandemic lockdowns kept people home and away from pubs; the first bar cost them a couple of hundred dollars to build. Buyers design their bar online with options such as TVs, refrigerators and kegs, and crews assemble it on site in under 90 minutes.
Using carpenters in California, Florida and New Jersey, the company has built more than 4,000 bars and reported $2.2 million in sales and 30 to 40 percent margins at the time of its Shark Tank pitch. In Season 16 the founders asked for $400,000 for 10%, and Kevin O'Leary joked that he was the third Irish guy in the room. They accepted Lori Greiner's offer of $400,000 for 15% plus a royalty on each unit sold.
